Refrigeration is the process of moving heat from one location,to another location where it is less objectionable. Winery(and other industrial) refrigeration systems typically employ a vapour-compression cycle to achieve this. The heat is transferred from the juice, wine orbrine to the evaporating refrigerant at the evaporator and theheat is discharged from the refrigerant at the condenser. Thecompressor increases the pressure (and consequently thetemperature) of the refrigerant driving the cycle.
